ChEBI: Acetate formed by condensation of acetic acid with (Z) -hex-3-ene-1-ol.
At concentrations below 10 ppm, it produces a very pleasant fruit-green taste, and at concentrations below 2 ppm, it tastes distinctly like bananas. This ester and a number of other chemicals can create very interesting combined flavors: A concentration of about 1ppm of cis-3-hexene acetate, in the presence of 0.05 ppm of allyl isothiocyanate (allyl mustard oil), produces a distinctive taste of unripe banana with sharp green and fruity notes, unmistakably banana, and definitely no mustard flavor. Both of these materials give very weak and incomplete flavor images at the concentrations shown respectively.
