Ethyl formate CAS 109-94-4
Ethyl formate, also known as ethyl formic acid, is a colorless, low-viscosity liquid. GB2760-96 specifies it as a permitted food flavoring. It is mainly used in the formulation of flavorings for rum, apricot, peach, pineapple, mixed fruit, and sherry. It is naturally found in Boronia dentigeroides, Florida orange juice, honey, brandy, strawberry, raspberry, onion, apple, pear, and rum. Artificial synthesis involves esterifying ethanol with formic acid in the presence of sulfuric acid, followed by dehydration and distillation with phosphorus pentoxide or anhydrous calcium chloride.
