Sodium metabisulfite is a widely used inorganic compound, usually in the form of white or slightly yellowish crystalline powder or small crystals, with a strong smell of sulfur dioxide. It has a density of 1.48g/cm³, is highly soluble in water, and its aqueous solution is acidic. At 20℃, its solubility in water is 54g/100ml, and at 100℃, it is 81.7g/100ml.
